Fresh Apple Cake

A little bit more work with the fresh apples, but well worth it.


Ingredients:


6 cups shredded or chopped apples


1 cup walnuts


2 eggs


2 1/2 tsp vanilla extract


2 cups flour


1 1/2 cups sugar


2 tsp cinnamon


2 tsp baking soda


1/2 cup oil


 

Mix dry ingredients in a bowl. Add oil, vanilla and eggs. Add nuts and apples. Mix well. Pour into a bundt or 9 x 9 inch pan. Bake 40-45 minutes at 325 degrees. You can serve plain or frost if you like. Cream cheese frosting works well.
